Caso estudio: análisis del impacto de la pandemia de COVID-19 en la pérdida de alimentos de productores de hortalizas y berries pertenecientes a la agricultura familiar campesina de la Región del Maule

Abstract

Durante los últimos años las pérdidas y desperdicios de alimentos (PDA) han cobrado importancia a nivel mundial y se han incorporado en la discusión nacional debido a sus implicancias. Esta investigación busca evaluar si las restricciones causadas por la pandemia de COVID-19 influyeron en alguna etapa de la cadena de suministro alimentario (CSA) causando un aumento de pérdidas de alimentos en los sistemas productivos de hortalizas y berries para una muestra de 120 agricultores pertenecientes a la agricultura familiar campesina (AFC) de la Región del Maule. Para ello, se definió el concepto PDA y sus límites, se realizaron encuestas a agricultores y posteriormente se estimaron las pérdidas de alimentos de la temporada 2021 para contrastarlas con las pérdidas de la temporada 2020 mediante la utilización de la fórmula de estimación de Pérdida de Alimentos (PA) adaptada por Herrera (2021). Luego, se utilizó el programa estadístico Stata/SE 17.0 para analizar los efectos del sistema productivo y de la temporada sobre la PA. Los resultados sostienen que no hubo una diferencia significativa en la PA en una cosecha sin el efecto de la pandemia versus la temporada 2021 cuya cosecha se realizó bajo efecto de la pandemia. // ABSTRACT: In recent years, Food Losses and Waste (FLW) have gained importance worldwide and have been incorporated into the Chilean discussion due to their implications. This research seeks to assess whether the restrictions caused by the COVID-19 pandemic affected any stage of the Food Supply Chain (FSC), causing an increase in food losses in the production systems of vegetables and berries for a sample of 120 farmers belonging to Family Farm Agriculture (FFA) in the Maule Region. The FLW concept and its limits were defined, and surveys were carried out and subsequently the food losses of the 2021 season were estimated to contrast them with the losses of the 2020 season by using the Food Loss (FL) estimation formula adapted by Herrera (2021). Then, the Stata/SE 17.0 statistical program was obtained to analyze the effects of the productive system and the season on FL. The results support that there was no significant difference in FL in a harvest without the effect of the pandemic versus the 2021 season whose harvest was carried out under the effect of the pandemic.
