Diseno y evaluacion tecnica de una precamara de congelado

Abstract

La empresa procesadora y exportadora de salmones “Salmones Multiexport Ltda.”, que tiene sus instalaciones de proceso de fileteado y congelado en la ciudad de Puerto Montt y la cual es una empresa líder en la Industria Salmonera, caracterizada por una alta competitividad basada en bajos costos de producción, tecnología de punta, profesionalismo en la gestión, la satisfacción de los clientes, capacidad innovadora, flexibilidad y un adecuado clima organizacional, requiere de la implementación de una precámara de congelado, la que opere a 0°C y se encuentre emplazada de manera contigua a las dos cámaras de refrigeración finales, que actualmente existen y cuya temperatura promedio es -23°C. La forma para cumplir este requerimiento esta dado por el flujo de calor que es necesario retirar de un espacio para almacenar productos, el cual esta dado por el flujo de calor total que consiste en: el calor transmitido al espacio refrigerado a través de sus superficies; el calor que elimina el producto al ser introducido y mantenidos en un el espacio refrigerado; el calor producido por luminaria, motores eléctricos y el metabolismo de las personas que trabajan en el interior de la cámara; la ganancia de calor asociadas al aire que entra en el espacio refrigerado y el calor producido por el equipo frigorífico en el proceso de refrigeración. Finalmente cerrando la unión entre la cámara cero y sala de despacho mediante una puerta, considerando también retirar las oficinas de frigorífico e insertar un sistema de refrigeración adicional al que ya existe. Permitiendo así no crear un sistema aparte, si no que, incorporar el nuevo sistema al que actualmente existe para las cámaras frigoríficas, reduciendo el costo finales del proyecto.

ABSTRACT The company procesadora and exporter of salmon Salmones Multiexport Ltda". that has their facilities of fileteado process and frozen in Puerto Montt's city and which is a company leader in the Industria Salmonera, characterized by a high competitiveness based on low production costs, tip technology, rofessionalism in the administration, the satisfaction of the clients, innovative capacity, flexibility and an appropriate organizational climate, require of the implementation of a precámara of frozen, the one that operates at 0°C and be located in a contiguous way to the two final refrigeration cameras that at the moment exist and whose temperature average is -23 °C. The form to complete this requirement this die for the flow of heat that is necessary to retire of a space to store products, the one which this die for the flow of total heat that consists in: the heat transmitted to the space refrigerated through their surfaces; the heat that eliminates the product when being introduced and maintained in a the refrigerated space; the heat taken place by star, electric motors and the metabolism of people that you/they work inside the camera; the gain of heat associated to the air that he/she enters in the refrigerated space and the heat taken place by the refrigerating team in the refrigeration process. Finally closing the union among the camera zero and it salts of office by means of a door, also considering to retire the refrigerator offices and to insert a system of additional efrigeration to which already exists. Allowing this way not to create a system separated, if not that, to incorporate the new system to the one that at the moment exists for the refrigera ting cameras, reducing the final cost of the project.
