The test was made in greenhouse where a floating trays system was established with the aim of evaluate four different substrates and two establishment system for the rocket salad (Eruca sativa Mill. cv Sauvage) and baby spinach (Spinacea oleracea L. cv Cesanne F1), from march to may 2009. Eight different treatments given by the combination of the substrates: peat moss, composted pine tree, a mixture of (composted pine tree + grape marc, in a ratio of 3:1), grape marc; in systems with and without replanting. The treatments were established by the use of a split - plot design in a factorial arranged 4 (substrat) x 2 (establishment system), using four repetitions per treatment. The experimental unit was a 96 alveolus seedling tray. For rocket salad and baby spinach the best evaluated substrates were peat moss, composted pine tree and mixture for the variables percentage of emergency, number of plants with first true leaf and plant size in direct sowing. However, no significant differences were found for the substrates in the establishment system with replanting. At harvest, highly significant differences were found in the direct sowing system in the variables leaves length, number of leaves per rosette (only in baby spinach) and weigh of rosettes, but it was not the case for the color in both species. Moreover, the fresh and dry weigh was measured to calculate the yield and the percentage of dry matter. The highest yields in rocket salad were 987.7g/m2 in the treatment without replanting – peat moss, while in baby spinach a better yield was observed in the combinations without replanting - peat moss(1629,1 g/m2) and without replanting – mixture (1334,2 g/m2), with no statistical differences with composted pine tree and grape marc. A sensory panel was made where color, taste, texture and general appearance were evaluated, observing that baby spinach and rocket salad were the best perceived in general appearance, in contrast to species from commercial sector. There were no significants differences in the others attributes, except for color in baby spinach, which was better evaluated that its commercial equivalent.
