Title: Aplicacion del analisis de peligro y control de puntos criticos (HACCP) en el sistema de certificacion organico nacional. Estudio de caso rubro berries - Region del Maule

Abstract: El propósito de esta investigación fue determinar los principales factores críticos del Sistema de Certificación Orgánico Nacional. Para ello se evaluó y caracterizó a los agentes involucrados y el funcionamiento del Sistema. Se aplicaron dos encuestas, la primera dirigida a 16 informantes calificados y una segunda orientada a 10 productores de berries orgánicos. Tales consultas se desarrollaron en las ciudades de Santiago, Curicó, Talca, Cauquenes y Chillán. Se utilizó la metodología del Análisis de Peligros y Control de Puntos Críticos (HACCP) y estadística descriptiva, lo que permitió establecer ocho áreas temáticas críticas, las que se componen de dos a cuatro factores críticos. Entre los principales resultados están la necesidad de información referida a agricultura orgánica, la evaluación y registro de insumos, y el financiamiento de programas de desarrollo. De acuerdo a estos resultados se recomienda establecer sistemas de información masivos, conformar un equipo multidisciplinario permanente de funcionarios del Servicio Agrícola y Ganadero y la creación de programas de incentivo. La investigación desarrollada considera indicaciones pertinentes de ser evaluadas en ensayos de campo y mediante análisis cualitativo, permitiendo establecer mejoras en el actual Sistema. Por lo tanto, este trabajo viene a ser referencia en estudios posteriores./ABSTRACT: The purpose of this investigation was to determinate the main critical elements of the National Organic Certification System. For this the agents involucrate in the function of the system were evaluated and characterize. During the developed of this research two polls were applied, the first one was applied to 16 certificated informants and the second one to 10 producers of organic berries. The polls were developed in the cities of Santiago, Curicó, Talca, Cauquenes and Chillán. The methodology of Hazard Analysis Critical Control Point (HACCP) and descriptive statistic was used, which allow us to establish eight main thematic critical areas, which made up from two to four critical factors. Between the main results are the need of information refers to organic farming, the evaluation and record of consumables and the financing of develop programs. According to the result it is recommended to establish a system of massive information, create a permanent multidisciplinary team of workers of the Servicio Agrícola y Ganadero and the creation of encourage programs. The developed investigation consider permanents indications of be evaluated in field essays and through qualitative analysis, allowing to improve the current system. Therefore, this work will be a reference in future studies.
