Abstract: El objetivo del estudio fue evaluar los efectos del sistema HarvestWatchTM, en atmósfera dinámica, sobre la madurez, escaldado superficial y capacidad antioxidante, en manzanas (Malus domestica Borkh.) cv. Granny Smith. El estudio se llevó a cabo, durante el 2010-2011. Los tratamientos fueron: sistema de frío convencional (0°C, >90% HR) con y sin la aplicación de 1-MCP, atmósfera controlada con y sin la aplicación de 1-MCP y atmósfera dinámica (HarvestWatchTM). Este último es un sistema de monitoreo que se basa en la medición de la fluorescencia de la clorofila, para ajustar el nivel de oxígeno, apenas sobre el mínimo tolerado por el fruto. Evaluaciones de madurez se realizaron a cosecha y luego a los 120, 150, 180 y 210 días, más 7 días a 20°C (vida anaquel). Adicionalmente, se registraron compuestos relacionados con escaldado superficial, por ejemplo: alfa-farneseno (AF), trienos conjugados (TC) y antioxidante (AO), así como el contenido de fenoles totales (ensayo de Folin-Ciocalteau),y actividad antioxidante (método DPPH), determinados en piel y pulpa. La incidencia de escaldado superficial fue evaluada luego de 150 y 210 días, más 7 días a 20°C.El sistema ACD (HarvestWatchTM) logró mantener la firmeza del fruto, acidez titulable y el color verde de la epidermis, durante todo el período de almacenaje. Además, mostró bajas concentraciones de AF, TC y AO, comparable a tratamientos con aplicación de 1-MCP. Como el desarrollo del escaldado superficial. La concentración de fenoles totales, no se vio afectada por los sistemas de almacenaje estudiados. La actividad antioxidante en piel y pulpa de la fruta en FC, incrementó su concentración, desde cosecha hasta los 150 días. Sin embargo, esta fruta es considerada de descarte, por presentar signos de escaldado en el total de sus frutos./ABSTRACT: The objective of the study was to evaluate the effects of HarvestWacthTM on dynamic atmosphere storage on maturity, superficial scald and antioxidant capacity on apples (Malus domestica Borkh.) cv. Granny Smith. The study was carried out during the 2010-2011. The treatments were: regular atmosphere storage (0°C, >90% HR) with and without 1-MCP, controlled atmosphere storage with and without 1-MCP and dynamic atmosphere storage (HarvestWatchTM). The latter is a monitoring system, which relies on the measurement of chlorophyll fluorescence, to adjust the oxygen level, just above the minimum acceptable for the fruit. Fruit maturity evaluations were made at harvest and later 120, 150, 180 and 210 days,plus 7 days at 20°C (shelf life). Additionally, scald related compounds i.e: alpha-farnesene (AF) and trienes (CT) and antioxidant (AO). It, as well as total phenolic content (Folin-Ciocalteau assay) and antioxidant activity (DPPH method) in peel and pulp were determined. Superficial scald was assessed after 150 and 210 days, plus 7 days at 20°C. The DCA system (HarvestWatchTM) maintained fruit firmness, titratable acidity and the green color of the epidermis during the whole storage period. In addition, it showed lower AF, CT and AO concentration, than to treatment with 1-MCP application. As superficial scald development. Total phenols concentrations were not affected by any of the storage systems studied. The antioxidant activity in fruit peel and flesh in RA storage was increased from harvest to 150 days. However, this fruit is considered a discard, for showing signs of scald on the total of the fruit.
